The extraction paradox: pheophorbide

Why gentle processing is a safety requirement, not a luxury.

Chlorophyll is fragile, and bad processing has a real consequence. When chlorophyll is broken down by heat drying, aggressive solvents, or light, it can degrade into pheophorbide, a compound that becomes phototoxic, reacting in the body on exposure to sunlight. Natural does not automatically mean safe.
